Suitable to be served on its own or with rice.
This dish is another one of my favorite comfort foods :)
Keep reading to see how it's made!
Ingredients:
- Half chicken
- Carrots
- Potatoes
- Onions, sliced
- A small ginger, grated
- Garlic, grated
- Korean sweet potato starch noodles
- Spring onions/green onions
- 200 to 500 ml water (depending on how thick you want the soup to be)
For the sauce:
- 1 tbsp Japanese soy sauce
- 2 tbsp Japanese cooking rice wine
- 1 tbsp Korean spicy powder
- 2 tbsp Gochujang (Korean red pepper paste)
- 1 tsp honey
I used Japanese soy sauce and cooking rice wine because I don't have any Korean ones at home and it's quite hard to find it here as they can be pretty expensive :( but they are great substitutes!
To measure the amount of ingredients, I bought a set of measuring spoons along with a measuring cup (?) from Daiso and I find them pretty handy :)
Method:
1. Prepare the ingredients: slice the onions, grate the garlic & ginger, and chop the potatoes and carrots into smaller pieces.
2. Bring a medium pot to heat and add some oil. Then, fry the chicken, onions, ginger, and garlic.
3. While waiting for the chicken to be cooked, prepare the sauce. Mix all the ingredients in a small bowl.
*remember to stir the chicken in the pot once a while to avoid it from sticking to the bottom of the pan.
4. Add in the sauce mixture to the pot and water. Give it a good stir and let it boil over medium heat for 20 minutes. Meanwhile, cook the noodles according to the package.
*If you want really chewy noodles, cook until the noodles are slightly under-cooked because we will add them to the pot later.
5. After 20 minutes, add the noodles and chopped spring onions into the pot; stir and leave for another 5 minutes.
6. Serve!
It's a really simple dish to make and it goes well when served with some kimchi and omelette.
Also, for those who are just learning to cook, I suggest that you get non-stick pans and pots as they are wayyy better and easier to wash too :)
