Always loving a good bowl of fried rice that reminds me of childhood :')
I recently found out that I have to cut eggs out of my diet for now :(
But! There are so many ingredients which can be used in place of eggs, so no sweat!
For today's recipe, I made pumpkin fried rice. You can swap the pumpkins with any ingredients you want, or you can just add them in.
Ingredients:
- Overnight rice (I used about 3 bowls of rice here).
- Onion
- Garlic
- Pumpkin RM5 for a half pumpkin
- 1tbsp Chinese light soy sauce
RM15 per bottle
- 1tbsp sesame oil
- Salt & black pepper, to taste
Things that you can add:
- Meat: chicken, beef, pork, ham, etc...
- Seafood: shrimps, squid
- Vegetables: basically any type
- Eggs
*You can also use noodles in place of rice :)
Method:
1. Prep all the ingredients.
2. To start, heat up a large pan/wok with some oil.
I like using sunflower oil in my cooking, only because it's a cheaper healthy option. Otherwise, I use olive oil.
3. Add in the pumpkins along with hot water (about a quarter cup). Since pumpkins take a long time to cook, I put in hot water to fasten the process as well as to make the pumpkins soft so that it goes well with the rice :)
4. After about 5-8 minutes (until the pumpkins are fully cooked), add in the garlic and onions and fry until fragrant.
5. Add in the rice and mix the ingredients around. Add in the soy sauce and sesame oil and mix.
6. Add in salt and pepper, and adjust the taste according to your liking.
Ready to serve!
For the seasonings, you can add in any sauce/spice that you think might go well with it - oyster sauce, paprika powder, chili powder, chicken stock, etc...
There are just so many types of variations that you can make for a good plate of fried rice!
