Chicken Soup with Lotus and Peanuts


This is one dish that I've really missed from my childhood.

The smell of the soup broth boiling from the kitchen as I sit in the living room to play...ah, such memories!


Now that I'm an adult, I have learnt to cook and to make this for the family :)

You can have this soup 2 ways - as a side dish or with noodles.

Also, if you have leftover broth, don't throw it! Use it the next day to make some scrumptious rice porridge! :)


Serving: 3-4pax

Ingredients:

- Half chicken (you can use a whole chicken as well)

- Lotus approx. RM15 for 2 in a pack

- A whole garlic, peeled

- 1 pack peanuts

*for the peanuts used in this recipe, I got them from the Chinese condiments section. They are just plain normal unseasoned peanuts.

- Salt & pepper for taste


Method:

1. Prepare the ingredients. Peel the lotus skin and cut them into slices.

Chicken: Wash and remove skin.

2. To a large pot, add water until it is 3/4 full and bring to boil. Once it is boiling, add the chicken and boil for about 10 minutes. Remove any excess oils on the surface using a ladle.


3. Add in the lotus and garlic. Boil for 1.5-2 hours. If you don't have that much time, you can just boil it for 45 minutes or until the lotus is fully cooked.

4. Add salt and pepper for taste.


If you want to make this soup more rich, add in pork bone as well :)

You can also add in extra ingredients such as white radish, carrots, and old cucumbers.
