What do you crave for on a hot & sunny day?
---> Cold noodles!!
In Malaysia, it's sunny almost all of the time :( so I often find myself searching for more recipes & variations of cold noodles in Asian cuisines. This is when I came upon this recipe by Seonkyoung Longest; she has a YouTube account as well as a blog.
I've been a fan of her cooking for more than a year now, and this is one of her recipes that I decided to share on my blog :) I did substitute some ingredients because I wanted to make it lower in calories and more convenient for me.
Also, in her recipe, she topped the dish off with an egg.
Serving: 2 pax
Ingredients:
- Japanese soba noodles RM12 per pack (this price is for Topvalu brand)
- Kimchi
- 2 tbsp gochujang
- 2 tbsp rice vinegar (I used the Japanese one) approx. RM18-25 per bottl, depends on brand
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sesame seeds for topping
- Cucumbers for topping
- Hard-boiled egg (optional)
Method:
1. Cook the soba noodles: in a medium sized pot, add water and boil. When it starts to boil, add in the soba noodles. Once done, immediately transfer the noodles into cold water
and set aside.
Cut the cucumber into small slices and set aside too.
2. In a bowl, add kimchi and use kitchen scissors to cut them into small, tiny pieces.
3. Add in the gochujang, rice vinegar, soy sauce, sesame oil, and sesame seeds. Mix well
4. Put the cooked noodles into the sauce mixture and mix well until the noodles are fully coated with the sauce.
5. Serve with your preferred toppings, along with sesame oil and sesame seeds!
P.S. Grilled/fried pork belly go extremely well with this :)

In the original recipe, use somen noodles instead, and an egg for topping :)
