Japchae is Korean stir-fried glass noodles which is often served on New Years (please correct me if I'm wrong).
Watching Korean family dramas has also allowed me to learn about Korean culture and cuisine :)
For those who are looking to have a healthier diet, this meal is low in calories and high in nutrition from the various types of vegetables. Read on to find out how to make this!
Ingredients:
For taste:
- 1/2 tbsp Chinese soy sauce RM15/bottle
- 1/2 tbsp Japanese soy sauce RM15/bottle
*If you have Korean soy sauce, then use 1 tbsp of it. Korean products are usually rather expensive, so I use many substitutes in my recipes.
- 1 tbsp sesame oil RM5/small bottle
- White pepper RM10/medium bottle
- Salt (optional)
Others:
- Korean potato starch vermicelli noodles
RM20/large pack
- Japanese sawi RM3/pack
- Carrots RM5/pack
- Onion
- 1 garlic
- Yellow pepper RM3 each
- Chicken breast RM4/pack
*I did not indicate the amount of vegetables as it is up to your preference. You can add more/less as you'd like :)
Method:
1. Prepare all the ingredients:
- Onions: chop/slice
- Pepper & carrots: slice into strands
- Chicken: cut into cubes
- Garlic: chop
2. Heat a large pan and add some oil. In the meantime, also bring a medium pot of water to boil.
3. First, fry the garlic and onions until fragrant. Once the water is boiling, you can put the noodles in to cook them (once the noodles are done, immediately remove from the water to prevent over-cooking).
4. Add in the peppers, carrots, and chicken.
5. Once the ingredients are fully cooked, turn the heat off.
6. Add in the cooked noodles and the sauces.
7. Mix well, taste-test, and serve.
It's always important to taste-test your dish once it's cooked to adjust it according to your preference.
Also, you can add in other ingredients that you like as well, such as green & red peppers.
