Classic Old Cucumber Chicken Soup


Nothing beats a good bowl of chicken soup.

There are SO many variations of chicken soup and they all taste great!


Traditionally (and even today), chicken soup is known for its healing properties. Whenever I fall ill, I would cook either chicken soup or rice porridge (aka congee).





Serves: 3-4 pax

Ingredients:

- Half chicken approx. RM9

- 1 old cucumber RM7

- Handful of red dates

- Handful of goji berries

- Few cloves of garlic, peeled

- Salt & black pepper to taste









Method:

1. Prepare all the ingredients:

- Chicken: I usually remove the skin to reduce the amount of fats in the soup, but it's really

up to your preference :)

- Red dates & goji berries: rinse lightly under tap water and then soak in cold filtered water

for 15 minutes. Rinse again and set aside first.

- Old cucumber: Remove the skin and cut into smaller pieces.

- Garlic: remove the skin.

2. Fill a large pot with 3/4 water and leave to boil.

3. Once it starts to boil, add the chicken and boil over medium-high heat for 15 minutes. Remove any excess oils on the surface using a soup ladle.

4. Add in the remaining ingredients and simmer over medium-low heat for another 30-45 minutes.

5. Add salt and black pepper according to your taste.


It only takes 5 very simple steps!

You can swap chicken with pork as well (pork spare ribs, pork bone, etc...), or just combine both!

Also, you may add vegetables of your choice. Usually, if I wanted to, I would add in napa cabbage and tofu :)
