Chicken Herbal Soup


Mmm~

I'm craving for some delicious and hot bowl of Chinese Chicken herbal soup~~


This is my favorite meal to make when I'm sort of lazy to cook a few dishes.

This can be served 2 ways: with rice or noodles.


Works both ways and tastes great both ways!



Ingredients:

- Half chicken RM8-10 depending on mass

- Red dates RM5 per 150-200g pack

- Goji berries RM15 per 300g pack

- Chicken herbal soup sachet approx. RM7

- Salt & white pepper to taste






Method:

1. Wash and soak the red dates and goji berries in a bowl of filtered water for around 15 minutes. Clean the chicken and set aside.

2. Fill a large pot with 3/4 water and let to boil.

3. Once the water starts to boil, add the chicken and cook on medium-high heat for 25 minutes.

4. Add in the soup sachets (and other ingredients that are included in the packet), red dates, and goji berries. Boil over low-medium heat for at least 1.5 hours.

*The longer you boil, the thicker the taste is. If I'm not short of time, I would boil it for 2 hours.

5. Add salt and pepper according to your preference.


It only takes five very simple steps to make a large pot of herbal soup :)

Perfect for dinner with the family, with a group of friends, or just on your own.

If you want to make a smaller portion, just reduce the number of ingredients.


You can also add in some extra ingredients such as: old cucumbers, winter melon, garlic, white radish (daikon).


I just love cooking soup 'cause I can basically add in anything I want!
